Honey Inspired Recipes

Use it to replace sugar, when you’re grilling, or add it to a dressing. There are many ways to incorporate honey while cooking. We asked our Local Home Grown Chef, Ellen Touart-Grob, to create some inspirational home cooking recipes using honey that you can create at home with your family.

Ginger Honey Tea

Instructions: Add thinly sliced fresh, peeled ginger root to just boiled water and let it steep for several minutes. Pour into cups and serve with honey, sweetened to your taste. Enjoy!.

Roasted Beets with Mint

Instructions: Serves 6 to 8 2 1/2 pounds fresh beets Olive oil Thyme Salt and pepper Preheat oven to 400º. Scrub the beets well to remove any dirt, place in a large bowl. Coat beets with olive oil, and toss with salt, pepper and thyme. Place 5 or 6 beets in the center of a large piece of aluminum foil, bring the edges together and crimp the foil package closed. Repeat this until you have all of the beets tucked into packages. Place the packages on a sheet pan and roast for about one hour (reduce the time for smaller beets; older beets may take longer) or until a knife can be inserted easily into the beets. Cool beets slightly. The skins should slip off easily when rubbed with your fingers; any skin that remains can be peeled off with a knife. Cut off the root end and slice into wedges. Prepare the dressing. Toss the beets with enough dressing to coat. Taste, add salt and pepper as necessary, garnish with mint. Serve.

Instructions: 3 Tablespoons olive oil 2 Tablespoons of balsamic vinegar 2 Teaspoons honey Salt and pepper to taste 2 Tablespoons small, fresh mint leaves

Spiced Pear & Apple Sauce

Instructions: Spiced Pear & Apple Sauce Serves 10 4 pears 8 local red apples 3 tablespoons butter 1/2 teaspoon cinnamon or 1 cinnamon stick 2 teaspoon freshly grated ginger 1 cup fresh or frozen whole cranberries 1/2 cup golden raisins 3/4 cup local honey Wash, peel and cut the apples and pears into quarters, remove the cores. Cut them into bite-sized pieces. Melt butter over medium heat in a pot, large enough to accommodate all of the apples and pears. Add the cinnamon and ginger, stir and cook until fragrant. Add the cranberries. Once the cranberries begin to pop, add the honey, apples, pears and raisins to the pot. Cook on low for 15 minutes or until the fruit is soft and breaking up. Serve warm and enjoy!
