4 to 6 servings
2 fresh kohlrabi, peeled, sliced and julienned
8 Large Radishes, washed, sliced and julienned
2 tablespoons whole milk yogurt
2 tablespoons good jarred mayo
1 tablespoon orange, lemon or lime juice or vinegar
2 teaspoons Dijon mustard
Salt and Pepper to taste
Peel the kohlrabi, trim off any fibers that run top to bottom, plus the tough bottom end. Slice into 1/8“ slices and then into 1/8” julienne, place in a bowl. Slice the radish into 1/8” slices and also into julienne, add to bowl.
Combine the yogurt, mayo, mustard and whisk in the juice or vinegar until smooth, pour over the kohlrabi and radishes and toss well. Add salt, pepper, finely chopped dill and parsley, to taste. Serve!
