Massaged Kale Salad

4 to 6 servings

 

One large bunch kale, any kind

Olive oil

Feta Cheese

Cranberries 

Seed or nuts

Lemon Juice

Maple syrup

 

Wash and dry the kale and tear it into bite-sized pieces

Drizzle a small amount of olive oil onto the kale leaves and use your VERY CLEAN hands to massage the oil onto the leaves.

Chop or break about ½ cup feta cheese (or more, to taste) into 1/4 “ sized pieces and add to the salad

Add cranberries and seeds or nuts to the salad

Mix 1 tablespoon lemon juice, ½ teaspoon maple syrup and 2 tablespoons olive oil together until they’re emulsified. Drizzle the dressing over the salad, toss and season with salt and pepper to taste.
